All the grapes are carefully picked by hand, then sorted on the bush or on a sorting table in the cellar, taking care to manipulate them as little as possible.
The winemaking is specific to each wine, with respect for the Organic Agriculture specifications and with minimum use of SO2.
The wines are aged in vats, barrels, or amphorae.
